We work a lot of late hours here at the Grateful Graze Ranch so putting together a quick and healthy meal is my daily challenge. Starting with a protein that cooks quickly on the grill also helps keep clean up to a minimum. Here’s a couple of meals I threw together that you might enjoy.
Our Butterfly Pork Chops are great on a bun or all by themselves on a plate. with this dish I seasoned the chop and put on the grill. On the stove I sautéed some onion and prepared minced garlic in olive oil. I keep chopped onion in a ziplock bag in my freezer making it easy to add to any dish. I had a bag of spinach that needed to be used and some leftover carrots from a dinner out the night before. I tossed it all in the hot pan with the onion and garlic until it wilted and seasoned with salt and pepper.
The entire meal start to finish took 15 minutes. Learn to work with what you have in the fridge!
The Boneless Skin-On Chicken Thighs also make for a fast tasty dinner. This quick dinner started with seasoning the thighs and starting the grill. While it was heating up I peeled two sweet potatoes and sliced to speed up the cooking time. I use a steamer on my stove top for most of my veggies. The thighs went on the grill skin side down to get a nice char on the skin. While they were cooking I moved the sweet potatoes to a cast iron skillet and sautéed them in some coconut oil and butter. These are just a couple of ideas that might be an inspiration for you. Eat good…Feel good!
