Delicious Indian Chicken!

Enjoy this unique dish that is full of flavor and spices!

I grew up in a home that used the traditional American herbs and spices. After a year of culinary school, I had been exposed to so many different flavor profiles I was blown away. Here's a dish that is really unique but gives you a comforting meal!



Ingredients:

2 tablespoons avocado oil

2 cups finely diced onion

4 teaspoons minced garlic

2 teaspoons minced ginger

3 cups crushed tomatoes

2 teaspoons finely diced green chillies (optional)

2 tablespoons paprika

2 tablespoons curry powder

2 teaspoons kosher salt

1 1/2 tablespoons dried coriander leaves

1 1/2 pounds skinless chicken breast, trimmed, cut into 1" cubes





Directions:

Preheat a medium sauce pan to medium heat. Add in oil and saute onion until nicely caramelized. Once caramelized, add garlic and remaining ingredients EXCEPT chicken.


Simmer on low for an hour if time allows. (This time allows for flavors to really marry)

Within the last half hour of cooking, add chicken. Cook on low until chicken reaches 165 degrees.


I serve with mashed potatoes topped with ghee and roasted carrots.
