Chicken Bacon Florentine Over Brown Rice

  • 4 Grateful Graze Boneless Skinless Chicken Breasts

  • 1 Package Alfredo Sauce

  • 1 C Spinach - chopped

  • 1 White Onions - chopped

  • 2 Packages Brown Rice

  • 1/4 C Shredded Parmesan

  • 1/4 C Mediterranean Olives - chopped - optional

Staples from Your Pantry

  • 1 1/2 C Milk

  • 1 1/2 T Butter

  • Salt and Pepper


Before you begin, watch this cooking video from Ranch Chef Matthew.


Preheat oven to 350°


Follow instructions on the alfredo sauce packet. Cook and set to the side, covered to keep warm.


In a large, oven-safe skillet, fry bacon over medium heat until it begins to crisp. Remove bacon and set to the side.


Lightly season chicken with salt and pepper. In the bacon drippings, place chicken breasts and onion. Sauté chicken on medium-high heat for 5 minutes on each side until golden.

Remove from heat.

(Chicken will finish baking in the oven.)


Add chopped spinach to alfredo sauce, stirring until slightly wilted. Arrange breasts on top of onions. Top each breast with bacon, alfredo sauce (reserving some for later), and parmesan. Place skillet in oven for 15 minutes or until the internal temperature of the chicken breasts reach 165°.


Warm rice according to package instructions.


Plating Your Meal:

Place 1 C of rice on each plate. When chicken is done, use a spatula to lift each serving from skillet and place on top of rice. Drizzle additional alfredo on plate and sprinkle additional shredded cheese. Top each breast with chopped olives.


Serve and enjoy!
