Change It Up Chicken Chili

It's that time of year...soup time! This easy chili recipe brings that nice little bit of heat you want from chili but breaks away from the traditional beef and tomato ingredients. It's a great way to bring variety to your family table with another great offering from Grateful Graze!

1 pound Grateful Graze Ground Chicken (can substitute chopped breast meat)

1 medium Onion, chopped

1 Tb Olive Oil

2 Garlic Cloves, minced

1 box (32 oz) Organic Chicken Broth (or use your own homemade broth)

1 can (4 oz) Chopped Green Chiles

2 Tsp Ground Cumin

2 Tsp Dried Oregano

1-1/2 Tsp Cayenne Pepper

1/2 Tsp Salt

1/2 Tsp White Pepper (or Black)

3 cans (14.5 oz each) Organic White Beans, drained (one cans mashed)


In a heavy pot (I use Grandma's old dutch oven because it makes me feel good) heat the Olive Oil. Add the Ground Chicken and chopped Onion and cook through. Ground chicken won't brown like hamburger, just cook to doneness.


Add the Garlic, Chicken Broth, Green Chiles, Cumin, Oregano, Cayenne Pepper, Salt, Pepper.


Drain 2 cans of beans and add to the pot. Drain the 3rd can of beans, pour into deep bowl and mash. Add the mashed beans to the pot and stir in.


Bring to a boil and turn down heat to simmer. Let simmer for as long as you'd like or until you can't help but dip up a big bowl!


Garnish with shredded cheese, and serve with crackers, or my favorite, Cast Iron Corn Bread!
